This morning, I woke up craving fruit. Hot, muggy summer days have started to descend upon us, and it's the perfect time to get playful in the kitchen and mix up your smoothie game. This bowl is sweet, with a touch of earthy undertones from kale and cilantro.
You can top this with whatever fruit, nuts or seeds you have on hand, and I found shredded coconut (unsweetened!) to add a tropical twist that paired perfectly with the cilantro and banana. Sprinkled hemp, chia, or flax seeds will add an energy boost with their high omega-3 content.
Green smoothies are nutritional powerhouses. They're packed with health benefits, and are easy for your body to digest since the food has already been broken down for you by your blender. While there is a fair amount of natural sugar from the pineapple and mango in this smoothie, both are full of valuable vitamins and minerals your body needs. Pineapple in this smoothie contains bromelain, which is an anti-inflammatory enzyme that aids in digestion of both starches and proteins. It can also help digest foreign microbes, keeping your immune system happy and healthy. Mango is high in Vitamin C, and helps clear heat in the body. Perfect for summer!
- 1/2 cup frozen pineapple
- 1/2 cup frozen mango
- 1 large banana (1/4 reserved and sliced for topping)
- 1 handful green kale
- 2 tablespoons loose cilantro
- 1/2 cup + 1/4 cup coconut water
- Hemp Seeds
- Shredded Coconut
total time: 5 minutes
yeild: 1 16 oz. smoothie
Combine fruit, kale, cilantro and 1/2 cup coconut water in vitamix or high speed blender. Blend on high speed, adding additional coconut water as necessary to reach a thick yet smooth consistency.
Transfer to a shallow bowl, and top with remaining fruit, seeds and nuts before serving.
