Meet Megan
Hi! I’m Megan. Thank you so much for visiting the loving table. This site has been a dream of mine for quite some time, and I’m so excited to share with you my recipes and health tips. The food I share gives a glimpse of what I serve on my own table, made with lots of love, gratitude and care!
The recipes you’ll see on this site are all plant-based, so you won’t find dairy, eggs, meat, or seafood in any of them. I try to use as many ingredients as I can in their whole form, as fresh and locally sourced as possible. I’ve found (with much experimentation) that this kind of diet works best for me, giving me lots of energy, good sleep patterns and great digestion. But, I know that you’re not me, and everyone is different! No matter what diet makes you feel your best, I hope that you’ll enjoy visiting my site and trying out some of my plant-centric recipes and tips.
I started on this journey about 4 years ago, right after I graduated from Georgetown University with a business degree. I was working a corporate job, during which time not only did I realize that sitting at a desk all day wasn’t for me – I also gained nearly 20 pounds! I was unhappy, unhealthy, and needed a change. I started focusing more on what I was eating, because I really didn’t have the time to exercise regularly. I was amazed at how small shifts made me feel, both physically and emotionally, and I decided to make a career change that focused on this new passion. I enrolled at the Natural Gourmet Institute for Health & Culinary Arts in New York City, and haven’t looked back since. I continued my education by taking Dr. Colin Campbell’s course in Plant Based Nutrition from Cornell University, and am currently enrolled at the Institute for Integrative Nutrition (INN) to become a certified holistic health counselor.
I’ve been lucky enough to be involved in the health and wellness sphere in a variety of ways since graduation. I’ve spent time teaching cooking classes to kids in schools, and crafting cleanse programs and marketing campaigns for Christopher’s Kitchen (a premier vegan restaurant in Jupiter, Florida). I’ve also worked at an eating disorder treatment center, and most recently, served as the sales and marketing coordinator for Purely Elizabeth, an organic and gluten-free natural foods company.
At the end of the day, my true passion is being in the kitchen. I love cooking, styling, photographing, and teaching why eating plant-based foods is so great for your health. There’s so much to learn when it comes to the healing properties of food and plant-based cuisine, and I can’t wait to share what I continue to discover with you.
